We always want summer to keep going with all of the incredibly delicious in-season fruits and vegetables. Then, as September approaches, we start looking forward to fall-inspired meals…apples, pears, winter squash, soups, one-pot Oktoberfest…but wait! We are getting ahead of ourselves…we are still trying to squeeze as much out of summer as possible!
There are several delicious ideas this week, and one particular favorite is the Roasted Beet & Bean Salad — it was inspired by a brilliant Eat REAL America member and it has phenomenal flavor! If you are skeptical about beets, this is the perfect idea to try — roasting beets makes them taste amazing!
While they are still in-season, we will keep ideas coming to help you take advantage of fresh ingredients from the farmers’ market including okra, cucumbers, tomatoes, summer squash, zucchini, bell peppers, eggplant and more! Keep in mind, the Greek Goulash and Zucchini Muffins are just a couple excellent ideas for using up all that zucchini – and of course, you can always type “zucchini” in the search bar to check out all the other ideas if you happen to be overloaded with zucchini (or any ingredient)!
