Week of August 31, 2015 - Weekly Meal Ideas


I always want summer to keep going with all of the incredible fresh fruit and vegetables, but then as it gets closer to September, I always start looking forward to fall meals…winter squash, soups, one-pot Oktoberfest…but wait!  I will stop, we are still trying to squeeze as much out of summer as possible!

We have some big-time hits this week that went over REALLY well with all of our taste-testers!  The Pistachio Chicken Sliders use ground chicken (or you can use ground turkey) to make delicious little burgers, and they happen to go great with the Citrus Zucchini Salad (if you have a spiralizer this is a great chance to use it!).  I can barely contain my excitement about the Healthi-Fried Okra (you know, it is not really fried, but it tastes like it is)!  It completes a spectacular Cajun meal when you make it with the Cajun Quinoa with Sausage and Kale!  And, if you are in the mood for a fantastic tasting stir-fry, the Jalapeño Mango Chicken will hit the spot…it tastes even better than takeout…and is better for you, of course!

While they are still in-season, we will keep the Hatch Chile ideas coming for at least the next week or two…the Hatch Chile and Prosciutto Pizza is one of our favorites!  Plus, the Tuscan Summer Minestrone is awesome with fresh ingredients from the farmers’ market!
