Just hearing “August” is a little bittersweet…the kids will be going back to school soon and summer will be winding down. The meal ideas this week will help you savor those summer flavors while you can! There are a couple of ideas I am especially excited to tell you about…the Need a Napkin burger is an amazingly delicious…and messy (in a good way)…burger and the perfect reason to fire up the grill! I have to admit, our kids love tater tots but, as you can probably imagine, we don’t eat them often! So, we came up with this version of sweet potato tots and they are REALLY good! The Kale Salad Tortillas are also great if you are looking for something quick, light and refreshing!
The No Mess Rustic Chicken and the Roasted Veggie Pasta are both ideal for using fresh veggies from the farmers’ market…or just “cleaning out the refrigerator” and using up whatever veggies you happen to have on hand! I can’t wait to make the No Mess Rustic Chicken again — it was THAT good! And, of course, there are the summer salads to use fresh peaches, cucumbers and watermelon!
