We hope you have an enjoyable and blessed Easter this weekend with family and friends! If you are anything like us, you may be swimming in leftovers. If so, you are in luck…we have included several ideas to put them to good use!
If you have leftover ham, the Classic Ham Cobb Salad is a great Springtime meal and is really delicious! It is also a perfect way to enjoy those leftover hard boiled eggs, as well as the Avocado Egg Salad — so crazy good and one of our favorite ways to make egg salad! And, if the Easter Bunny left any carrots behind, you can use them for the Herb Parmesan Carrot Fries…these are a unique and flavor-loaded spin on carrots!
In case you need a reason to fire up the grill, the Tropical Salmon Sandwich is ideal. You can grill everything, including the salmon, the pineapple, the jalapeno and even the avocado! Plus, you can enjoy the Grilled Asparagus & Scallions as a fantastic side. And, for your leftover pineapple, make sure to try the tropical Pineapple & Sausage Quinoa.
