As many celebrate Cinco de Mayo next week, we have included several Mexican-inspired meal ideas for you to enjoy! Obviously, Cinco de Mayo is the 5th of May, but what is its significance? Many believe it’s Mexico’s Independence Day, but that day is actually celebrated on September 16, which is a much more important holiday in Mexico. Cinco de Mayo is a celebration of Mexican culture and heritage and is celebrated primarily in the U.S. In 1862, Mexico won the Battle of Puebla against France, which was a very big deal because France sent a huge army to invade Mexico and, although the Mexicans were the underdog, they won the battle and this unlikely victory is celebrated every 5th of May.
So, to get you in the mood to celebrate Mexican style, we have included Hawaiian Fajitas and Avocado & Spicy Mayo Stuffed Burgers — they are both the ideal reason to get your grill on! And, while you are at it, enjoy the Grilled Asparagus and Scallions. Then, the Mexican Beans with Avocado are a perfect match to enjoy with either one. If you love Caesar salads, we think you will also love the Mexican Style Caesar Salad…delicious and super easy!
Look for asparagus at the farmers market this weekend and, if you run across any fennel, buy some for the Creamy Cucumber & Fennel Salad.
Have a great week and Happy Cinco de Mayo!
