Week of April 26, 2021 - Weekly Meal Ideas


Many farmers’ markets are now in full swing!  Visit your local market this weekend and pickup some grass-fed meat as well as freshly harvested asparagus, turnips, greens, herbs and more to celebrate Spring in style!  You can savor asparagus season while it is here by enjoying the Asparagus Lentil Salad (the sauce is absolutely delicious), the Lamb Meatballs with Mint Pesto Pasta (if you read the coaching tip this week, you could even use spiralized veggies for the pasta), and the Hearts of Palm, Jicama & Asparagus Salad (don’t leave out the maple sriracha pecans!).

It should be a great weekend to fire up the grill, and the Grilled Steak Panini and Grilled Turnips are loaded with flavor!  Speaking of flavor-loaded, the Pizza-Inspired Chicken Skillet is another great option that the whole family will love.

For a quick weeknight meal, the Open-Faced Smoky Greens & Beans is easy to prepare and incredibly good.  Plus, if you are want some early inspiration for Cinco de Mayo, put the Chipotle Huevos Rancheros with Corn & Black Beans in your meal plan!
