As we mentioned in this week’s coaching tip, homemade dressings can be surprisingly simple and we have included several in this week’s meal ideas. The Brussels Sprouts and Kale Salad has an excellent creamy dressing made with an avocado, and the Mexican Salad with Honey Citrus Vinaigrette includes a crazy simple, yet delicious, vinaigrette.
Remember to enjoy eating in-season and visit your local farmers’ market! They are now opening in most areas and are the best place to get many of your ingredients for the week!
