We hope you have an enjoyable and blessed Easter this weekend with family and friends!  If you are like us, you may be swimming in leftovers next week.  If so, you are in luck…we have included several ideas to put them to good use!

If you have leftover ham, the Classic Ham Cobb Salad is a great Springtime meal and is really delicious!  It is also a perfect way to enjoy those leftover hard-boiled eggs, as well as the Spring Salad with Deviled Egg Inspired Vinaigrette and the Avocado Egg Salad — so crazy good and one of our favorite ways to make egg salad!  And, if the Easter Bunny left any carrots behind, you can use them for the Curry Roasted Cauliflower & Carrots…a unique and flavor-loaded spin on cauliflower and carrots!

In case you need a reason to fire up the grill, the Rosemary Swiss Burgers are ideal.  They are even better than what you would get at many restaurants!  Plus, you can enjoy the Springtime Strawberry Couscous Salad as a fantastic side – this could also be a great addition for your Easter table.

If you have been watching our “what do we eat?” videos during Lent, you may have seen the Black Forest Overnight Oats.  Thanks to your feedback, we incorporated coconut into the final version for a delicious and satisfying grab and go breakfast!
