What do you do to celebrate Fall and National Pizza Month? You make an Autumn Pizza! Loaded with Fall-inspired veggies like squash, eggplant, and beets, it is loaded with nutrients…it even has a pumpkin pizza sauce! The best part? It’s crazy good — see if you agree!
This week’s meal ideas also include some “warm you up” meals like Buffalo Chicken Chili (buffalo hot wing flavor in a chili!) and Lasagna-Stuffed Spaghetti Squash (a fantastic change of pace from traditional lasagna!).
One of our favorites this week is the Butternut Squash Veggie Bake. If you are looking for an incredibly tasty, quick and easy, veggie-packed, one pan meal, this is it! The whole family loved this and it’s so easy to serve with tortillas, turn into a wrap or eat all by itself. And, the leftovers are perfect for lunch – or put an egg on top and enjoy it as a fantastic quick & easy breakfast!
As we wrap up our October Superfood, we had to include one more delicious way to enjoy Brussels sprouts…Strip Steak Over Shaved Brussels Sprouts! Looks and sounds fancy, but it is ridiculously easy!
