This week’s meal ideas are jam-packed with Fall veggies!  The Pear and Butternut Squash Salad has a flavor-popping maple balsamic dressing that will leave you craving more, and the Spicy Sweet Potato Hummus is the perfect side or snack…addicting and delicious!

Meatloaf may sound like just another boring meal, but this one has a surprise ingredient…Brussels sprouts!  You heard right, and it’s fantastic — and you will love the leftovers…warm up slices in a skillet and turn them into incredibly delicious meatloaf sandwiches!  Served with the Roasted Cauliflower and Carrot Mash, you will never believe your great-tasting meal is loaded with so many veggies!

Since all of us need quick and easy too…the Slow Cooker Chipotle Veggie Chili, Middle Eastern Inspired Chicken Sandwich, and Simple Fish Tacos will help simplify your busy weeknights!  “Crazy good!”…this is the most recent comment we received about the Kale Pesto Pasta…if you haven’t already, you must try making homemade pesto…but beware, the flavor and freshness may mean the jarred version at the store may never taste the same!
