It’s officially October, so you know what that means…Fall-inspired meal ideas! We have included ideas for sweet potatoes (including a Roasted Sweet Potato Soup with Grilled Cheese Croutons and Oktoberfest-Inspired Potato Skins), roasted butternut squash that turns a simple kale salad into something extraordinary, and a homemade Maple Cinnamon Applesauce (and it’s easier than you think!). Put these on your shopping list and head out to the farmers’ market for some great, local, in-season ingredients!
The quick and easy ideas this week include an Eat REAL America favorite…the Southwest Quinoa with Simple Guacamole – it is super good! We have had many tell us “I have tried quinoa before and it never tasted THAT good!” Paired with a lazy man’s way to make guacamole…it is definitely a memorable meal!
