Week of May 5, 2014 - Weekly Meal Ideas


Cinco de Mayo!  As many celebrate Cinco De Mayo next week, we have included several meal ideas for you to enjoy with a Mexican theme!  Obviously many of us know that Cinco de Mayo is the 5th of May, but what does it mean?  Cinco de Mayo is a celebration of Mexican culture and heritage and is celebrated primarily in the U.S.  In 1862, Mexico won the Battle of Puebla against France.  The reason this is a big deal is because France sent a huge army to invade Mexico and although the Mexicans were the underdog, they won the battle and this unlikely victory is celebrated every 5th of May.  Many believe Cinco de Mayo is Mexico’s Independence Day, but actually that day is celebrated on September 16, which is a much more important holiday in Mexico.

Some of the Mexican-inspired meal ideas for this week are more traditional, like the Mexican Chicken Stew, Mexican Salad with Cilantro Honey Lime Vinaigrette, and the Cilantro Lime Brown Rice.  Others are Mexican-style with a different spin — the Salmon Taco Lettuce Wraps and the Green Chile and Chipotle Turkey Burger are great-tasting examples of this!  The Chipotle Huevos Rancheros make a perfect Mexican-style quick and easy breakfast dinner – it is really delicious!  Other things to celebrate this week include Herb Day which is Saturday, May 3rd at the Kansas Grown Farmer’s Market.  Although cilantro is probably my favorite herb (with basil being a close second!), the herb of 2014 is tarragon!  So, we have also a fantastic way to use tarragon in the Grilled Vegetables with Fresh Tarragon Dressing.  Whether you celebrate Cinco de Mayo or Herb Day or any other special occasion, we hope you have a chance to enjoy time with your family and friends!

Herb Day is Saturday, May 3rd, at the Kansas Grown Farmer’s Market at 21st and Ridge!  There will be lots going on!
