Week of May 29, 2017 - Weekly Meal Ideas


Happy National Wine Day!  Pour a glass of your favorite wine while you browse this week’s meal ideas.  Plus, any of these meals would pair fantastically with a good glass of vino!

Since this weekend marks the start of summer, we have included several ideas this week that are light, easy and make great use of in-season ingredients from your local farmers’ market!  Plus, several are perfect for the grill!

The Kale & Coconut Veggie Stir Fry, the Sugar-Snap Pea & Cherry Tomato Saute and the Vietnamese Lettuce Wraps will keep things quick, easy and delicious!  The Portobello Stuffed with Sausage, Spinach and Mozzarella and Pineapple Mojito Chicken Bowls are ideal for the grill…yes, you can even grill the pineapple!  Crazy good!

And, the White Fish with Rhubarb Salsa is perfect proof that rhubarb is NOT just for desserts!  Pick some up at your local farmers’ market and give it a try!

While you’re at the market, pick up some fennel and keep your May Superfood Challenge going with the Fennel and Leek Al Forno…this is just a fancy way of saying that the food is baked in an oven.  This is another example of how delicious a few in-season ingredients, simply prepared, can be!
