Week of May 2, 2016 - Weekly Meal Ideas


You may be wondering…why rhubarb?!  We have a couple of reasons for including rhubarb in this week’s meal ideas.  First, rhubarb is going to be the Superfood of the Month for May, so the cat’s out of the bag and we are giving you a head start!  The other reason?  Because it is in-season right now…look for it at your local farmers’ market!  More to come on rhubarb in the coaching tip next week…give it a try and remember – it’s not only for dessert!

There are definitely some memorable flavor-filled ideas this week too…the Zesty Pizza Burger is sure to make your whole family happy and the Chermoula-Inspired Roasted Vegetables & Chickpeas has made our list of favorites!  The Springtime Minted Pea Dip is light, refreshing and perfect for this time of year!

The Peanut Cabbage Stir Fry and Mexican Black Bean Veggie Pizzas will keep mealtime quick, easy and healthy!  And, of course, the Mexican pizza is a great way to help celebrate Cinco de Mayo!

We are still in shock about an amazing Spaghetti Bolognese we had last night…even more amazing, it had no meat, but your family will never know (and letting them in on the secret is completely optional)!  We can’t wait to share it with you in the next couple of weeks!
