March is supposed to go out like a lamb, right?! The meal ideas this week are somewhere between shaking off the winter blues and welcoming Springtime bliss! I can remember a time when I thought soups were only for cold wintery days, but am glad I learned otherwise. The Split Pea and Ham Soup is simple and has a nice Springtime flair! The Cod with Tomato and Caramelized Fennel and the Zaatar Roasted Eggplant Salad are both delicious, and one of my favorites this week is the Egg-topped Cauliflower Couscous with Bacon! Yes, couscous made from cauliflower! Of course, it would be an excellent breakfast, but also the perfect breakfast dinner! As we know, there is something special about crock pot meals…I love the feeling that dinner is taken care of while I am tackling the day! We have included a Slow Cooker Beef Brisket, where the beer adds a fantastic flavor! Then, you can turn the leftovers into Brisket French Dip Sandwiches for a quick and easy meal!
