Week of March 3, 2014 - Weekly Meal Ideas


We may not be able to celebrate Mardi Gras in New Orleans, but at least we can eat Mardi Gras style!  Fat Tuesday is March 4, which as most of us know, means the day before Ash Wednesday and the beginning of Lent.  I didn’t realize this but the celebration of Mardi Gras goes back as far as the late 1700’s and in 1875, the “Mardi Gras Act” was signed making Fat Tuesday a legal holiday in Louisiana, which it still is today.  So, if you are looking forward to maybe over-indulging a little on Fat Tuesday (still eating REAL food of course!), then we have some great recipes for you this week!  The New Orleans Red Beans and Rice will get you in the Mardi Gras mood and so will the Cajun Shrimp and Guacamole Pizza!  Yes, Cajun shrimp and guacamole all on the same pizza and it’s delicious!  The Muffaletta-Inspired Vegetable Salad is one of those recipes that is good the first go round and even better the next day!  For those celebrating the season of Lent, we will provide at least one fish or seafood recipe the next few weeks, and of course vegetarian options too!  Also, in two weeks, get ready for some St. Patrick’s Day-inspired meal ideas!
