Week of March 20, 2017 - Weekly Meal Ideas


Monday is officially the first day of Spring!  Although the weather is still trying to decide if this is true, we are starting to introduce some delicious Spring-like recipes we hope you will LOVE!

A great one to try this week is the Shaved Asparagus with Parmesan Dressing – it’s really tasty and refreshing!  Another is the Catfish Salad with a Flair…its Asian flair, fresh herbs and tangy dressing make this one memorable salad!  Plus, the Spiced Cauliflower Salad has a fantastic drizzle with hints of lemon that is the perfect complement to the slightly spicy cauliflower!

We must mention the Roasted Eggplant Pasta – this is the perfect meal if you have ever wondered what to do with eggplant!  It tastes amazing roasted.  And then, when turned into a simple pasta dish…we have been told “this is so incredibly good — it is one of my all-time favorites!”
