Week of March 17, 2014 - Weekly Meal Ideas

What’s not to love about St. Patrick’s Day?  We get to wear shamrocks and our favorite green apparel, partake in our favorite green beverages…and, best of all, enjoy some great St. Patrick’s Day inspired meals!

What is the most popular food to eat on St. Patrick’s Day?  If green beer was a food that would probably come in first, but many people go for something that include Guinness or cabbage.  We have you covered on both fronts this week!  We have included a recipe for Deconstructed Cabbage Rolls with the same great flavor as traditional cabbage rolls, but this version is much easier to put together!  We have also included a great Slow Cooker Guinness Beef Stew…with a surprise ingredient you may not expect that adds a great subtle flavor.  Since Ireland is considered to be “The Emerald Isle,” we have a delicious Emerald Broccoli Salad that would go great with any of the entrees!  I also have to mention the Kale Pesto Pasta because it is fantastic and just may be my favorite this week!  Of course, this “green” holiday wouldn’t be complete without a recipe for Green Eggs and Ham – this is a healthy REAL version of the Dr. Seuss favorite!

Happy St. Patrick’s Day and thank you for being a Get REAL Wichita member!
