Hello June…and hello summer! As we launch into hot and humid weather (at least here in the Midwest), this week’s meal ideas include a combination of meals that let you enjoy the outdoors (including the grill) as well as some that will help keep you cool and refreshed! Plus, the Slow Cooker Italian Turkey Meatballs lets the slow cooker do all the work so you can come home to an excellent, no-fuss dinner!
The Hawaiian Fajitas are absolutely delicious hot off the grill and the Spicy Veggie Quesadillas will keep things quick and easy. We served these for family who were in town for a visit and got rave reviews! Take advantage of in-season strawberries and fresh mint with the Strawberry Salad with Strawberry Mint Vinaigrette — the dressing is creamy and packed with flavor!
Try the Kohlrabi and Mango Salad for your June Superfood Challenge – easy, refreshing, healthy and delicious! And, for a change of pace, try the Chipotle Huevos Rancheros…it’s fantastic for dinner and we recently enjoyed it for a weekend breakfast — it’s so incredibly good you just might think you were kicking back at a bed and breakfast!
