Week of June 19, 2017 - Weekly Meal Ideas


Did you know that June is National Fresh Fruit and Vegetables month?  Of course, Eat REAL America has you covered when it comes to fruits and vegetables — and the recipes in this week’s meal ideas include a delicious variety!  If you are going to the farmers’ market this weekend, here are some items to pick up for this week’s meals:  carrots, broccoli, kale, onions, zucchini, yellow squash, red bell peppers, kohlrabi, turnips…and whatever else catches your eye!

There is one idea this week that stands out and we really hope you have a chance to try it – the Coconut Cream Tiramisu!  We are super excited because we love tiramisu, but until now have never been able to master an easy, yet delicious, homemade version.  This one is easy and tastes fantastic — it’s an ideal summer sweet treat!

A couple of our favorites this week include the Slow Cooker Thai Inspired Pulled Pork that turns into the Bahn Mi Sandwich for a second quick and easy meal (tender and incredibly good).  The Tandoori Chicken and Moroccan Roasted Carrots were a huge hit with the whole family, and the Roasted Veggie Pasta is perfect for a busy summer weeknight.

Don’t forget about the June Superfood Challenge — the Glazed Turnip and Kohlrabi Salad may leave you shocked how good turnips and kohlrabi are together!
