Have you ever wondered what to do with collard greens? The Stir-Fried Greens with Jalapeño and Ginger is a delicious way to prepare them (or you can use any other dark greens such as Swiss Chard), they are very versatile to go with almost any entree! We also love the Kale Salad with Roasted Apples — which could also be easily transformed into an entrée salad.
Believe it or not, the Portabella Veggie Burger is a great alternative to your traditional burger…we have tried many veggie burgers and many of them end up in the “not website worthy” file, but not this one! Give it a go for a great change-of-pace, plus, it’s super-easy to prepare! And, pairing it with the Honey Dijon Roasted Potatoes with Rosemary will make dinnertime a hit!
