As we are all well aware…soup weather continues! There is a fantastic Lasagna soup in this week’s meal ideas – I know you are thinking “Lasagna Soup?” This one is really amazing – think Lasagna in a bowl! One other meal idea this week was inspired by a restaurant in Kansas City that we visited over the holiday – Westside Local near downtown KC. I had a Spicy Jalapeno Burger that was out of this world, which inspired us to share a Jalapeno Burger with Pineapple Salsa recipe that comes pretty darn close! The heat from the jalapenos and sweetness of the pineapple work great together. If you have “heat sensitive” family members, you can easily modify this and they can still enjoy a great burger! And of course, we have included a couple of great quick and easy meals to speed dinner along on those busy weeknights!

- Get some fresh greens in the middle of winter! This Saturday, January 11th, Karen with Elm Lane Farm will be at the Sedgwick County Extension Office at 21st and Ridge from 8:00 -10:00 AM.
