Fat Tuesday is next Tuesday, February 9th! Did you know that celebrating Mardi Gras goes back as far as the late 1700’s and, in 1875, the “Mardi Gras Act” was signed making Fat Tuesday a legal holiday in Louisiana? And it still is today! Since most of us probably can’t squeeze in a trip to New Orleans to celebrate Mardi Gras, we can at least EAT Mardi Gras style — you will see that several of the meal ideas this week are New Orleans-inspired.
If you have never tried lentils, the Jambalaya Lentil Bowl is a great-tasting place to start. The Red Beans and Rice and Muffuletta-Inspired Vegetable Salad are delicious and will help get you in the Mardi Gras mood! Plus, the Catfish with Spicy Red Sauce is perfect for a quick and easy weeknight meal.
Of course, if Tuesday is Fat Tuesday, the next day is Ash Wednesday, which means the beginning of Lent. We have included some great “no meat” meal ideas this week.
