There is great variety in this week’s meal ideas and they are all easy to prepare as gluten-free meals! Did you know that Saturday is “National Cook a Sweet Potato Day?” I’m sure everyone has that marked on their calendars, right?! What a convenient coincidence because my favorite meal this week is the Chipotle Steak Fajita Stuffed Sweet Potato! I love stuffed sweet potatoes (of course you can use a regular potato too) because they make such an easy and hearty meal — and this one is fantastic! It has a kick to it, but the great thing is you (or others in your family) can adjust it to their liking! There are also many other sweet potato recipes available at www.eatrealamerica.com.
The Roasted Veggie Bowl with Secret Sauce is really amazing too! If you are in the mood for a breakfast-inspired dinner, check out the Egg-Topped Soba Noodles with Asparagus and Bacon – it’s delicious, and gluten-free if you use gluten-free noodles! And, since we are all probably getting a little anxious for springtime we have included a baked version of grilling kabobs – the Baked Pineapple Chicken Kabobs.
