What is one of the best things about eating in-season? It’s eating seasonal produce such as summer squash, zucchini, melons, corn on the cob and fresh juicy tomatoes while they are at their best. Then, once you start to feel like you have had your fill, you start getting excited because September (and Fall!) is right around the corner with more amazing produce such as winter squash, crisp apples, pumpkin and more. But wait!…we will stop, we are still trying to squeeze as much out of summer as possible!
We have some big-time hits this week that went over REALLY well with our younger taste-testers! The Summer Squash Taco Boats were even MADE by our kids (during our Sunday “kids cook” dinner!) and they loved them! They also agreed the Seafood Stuffed Pork Chops are incredibly delicious — and the perfect reason to fire up the grill!
The sides this week are quick, easy and incredibly good! Pick up fresh tomatoes, basil, corn, radishes and bok choy (ideally, from the farmers’ market) and you will be all set to enjoy the Diced Caprese Salad, Corn & Radish Salad with Lime Dressing and the Bok Choy Stir-Fry!
While they are still in-season, we will keep the Hatch Chile ideas coming for at least the next week or two…the Chicken Burrito Bowl with Hatch Chile Pico de Gallo is a favorite!
