Tomatoes, zucchini, watermelon, peppers, okra, fresh greens and herbs…and so much more! Take advantage while you can! So many times, we enjoy meals in the summer and find ourselves saying, “there is no way this would be as flavorful as it is RIGHT NOW!” That’s the power of fresh, local, in-season ingredients!
Several meal ideas this week are excellent examples…the Roasted Ratatouille, Caprese Grilled Steak and End of Summer Chicken Foil Packet (also a great way to try okra for the August Superfood Challenge)…they are all incredible with in-season ingredients including fresh juicy tomatoes and fresh herbs!
Another one to savor right now is the Watermelon and Shishito Salad — we fell in love with shishito peppers a few years ago and enjoy them frequently, whether it is on the grill or sautéed in a skillet. A trip to the farmers’ market is worth it just for these addicting peppers! And, adding them to this salad sends the flavor over the top!
The Veg Out Flatbread Pizza and the BLT salad are also delicious with ingredients just harvested from your garden or a local farm.
