If you have kids starting school, it may feel like summer is almost over, but the fresh produce is still going strong! Take advantage of those fresh peaches, tomatoes, melons, and corn while you can! My favorite meal idea this week is inspired from our recent Chicago visit…the Bi Bim Bop! With its catchy name, it is a Korean dish that means “mixed rice,” but it is much more than just rice. This version has veggies and beef and great Korean flavor! Along with the Peach Pecan Salad, Grilled Balsamic Chicken Legs, Charred Corn Salad, Summer Stuffed Peppers, and more – you could be eating really well this week!
