Week of April 28, 2014 - Weekly Meal Ideas


Spring is in full swing!  More fresh produce is showing up at the farmers’ markets and in local restaurants!  This week’s meals include some ideas on how to enjoy the great produce and fresh herbs.  For example, the Spring Minestrone is absolutely delicious, as is the Seared Scallions with Poached Egg!  And, it wouldn’t be Spring without some asparagus recipes!  The Shaved Asparagus with Parmesan Dressing and the Hearts of Palm, Jicama and Asparagus Cabbage Salad are both great-tasting sides to celebrate the season!

We also find this time of year, our family seems to be busier than ever…so we have included several meals this week that come together really easy for those busy weeknights!  The Slow Cooker Italian Turkey Meatballs, Apple Kale Millet (you can also use quinoa or rice) with Spicy Shrimp and Bacon, and the Enchilada Style Stuffed Sweet Potato are all simple and make dinnertime at home much easier!  Next week, we will include some Mexican-inspired meals to help you celebrate Cinco de Mayo!

  • Southwest Corner Farm has joined our family of Get REAL Wichita merchants!  They will be at the market on Saturday and will have fresh herbs along with greenhouse tomatoes and asparagus!  Use your coupon and pick up some fresh basil for the Spring Minestrone!

  • It is difficult to go one week in our house without fresh greens from Elm Lane Farm!  Pick some up to see what we mean — so fresh and delicious!
  • If you are craving some good quality beef (we have lots of great recipes on eatrealamerica.com), remember to take advantage of the special deal with Graze The Prairie and pick up some of their grass-fed beef!  The venison from Farmer’s Fallow Deer is also a great option!

  • Visit The Seafood Shop and use your coupon for some fresh fish including shrimp for the Apple Kale Millet with Spicy Shrimp and Bacon!
  • Stop by Green Acres and pick up the other meal ingredients you may need – and of course, use your coupon!

  • Next Saturday, May 3rd is the opening day for the Old Town Farmer’s Market!  If you go, walk over to Public for a great-tasting lunch!
  • The Green Acres Farmer’s Market is open on Tuesday afternoons from 3:00 to 6:30 PM!
  • Saturday, May 3rd is Herb Day at the Kansas Grown Farmer’s Market and Chef Paul from Harvest Kitchen will be there!  He is a great person and so much fun to talk to — he loves hearing from Get REAL Wichita members!
