Why We Like It
These delicious chewy cookies are frequently requested and disappear quick! They even sneak in ground flax seed for added nutrition…amazingly delicious!
Preheat the oven to 350 degrees
Mix the Dry Ingredients:
- 2 cups old-fashioned rolled oats (see quick tip)
- 1/2 cup whole wheat flour (or whole wheat white flour)
- 1/4 cup ground flax seed
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
Add to a medium size bowl and stir to combine. Set aside.
Mix Wet Ingredients:
- 1/4 cup butter (unsalted, melted)
- 1 cup brown sugar (or coconut sugar)
- 1/4 cup vegetable oil (or canola oil)
Add to a large bowl and mix together using an electric mixer on medium speed for 2 minutes. (Coconut sugar may take a little longer to cream together so make sure you mix for 2 minutes.)
Add Next:
- 1 large egg
- 1 tsp vanilla extract
Add to the bowl with the wet ingredients and mix again until well combined. Gradually add in dry ingredients and mix until well combined.
Add Last:
- 1/2 cup walnuts (chopped)
- 1/2 cup dark chocolate chips
Add to the batter and stir until just combined. Use a tablespoon to scoop and form into cookies and place on (2 or 3) greased baking sheets, about 2 inches apart, making 32 cookies.
Bake for 10 minutes.
Let cookies sit on the baking sheet for about 2 minutes once you remove them from the oven. Then, transfer them to a cooling rack or place on wax or parchment paper to cool. Store cookies in an airtight container. They also freeze beautifully!
Quick Tips
If desired, you can process 1 cup of the oats into oat flour, for a slightly smoother texture. Keep in mind, when you scoop the cookies onto the baking sheet, they may seem a little crumbly. Simply form into mounds and they will hold together perfectly after baking.
