Why We Like It
One of our favorite ways to cook asparagus is roasting it in the oven. Tossed with mushrooms, it only takes 10 minutes to cook! Feel free to double the recipe, because planned-overs are ideal for breakfast (with an egg on top), or to top your lunchtime salad!
Preheat the oven to 400 degrees
Prepare and Roast:
- 1 lb asparagus (stem ends trimmed and cut into 2 inch pieces)
- 8 oz mushrooms (sliced or quartered)
- 2 Tbsp olive oil
- 1/2 tsp sea salt
- 1/2 tsp black pepper
Add to a large bowl and stir to combine.
Spread the vegetables onto one large (or 2 medium) greased baking sheet in a single layer. Roast for 10 minutes.
