Why We Like It
Breakfast in less than 3 minutes? It is possible…and easy made in a coffee mug! An oversized coffee mug works even better! Get creative and come up with your favorite flavor combinations…Mexican (black beans, corn and salsa), Greek (sun-dried tomatoes, Greek olives and feta cheese), or Indian (add turmeric seasoning for an Indian inspired twist)!
Make the Mug O'Eggs:
- 2 eggs
- 1/2 tsp dried minced onions (or 2 Tbsp chopped yellow or white onion)
- 1 cup baby spinach leaves
- 2 Tbsp rolled oats (optional)
Add into an oversized microwave-safe coffee mug. Stir to scramble. Microwave on high uncovered for 70-90 seconds (cooking time will vary depending on the power of your microwave).
Add the Toppings:
- 1/4 cup shredded cheddar cheese (or cheese of your choice)
- 1/4 cup salsa
- 1/4 cup avocado (diced, OPTIONAL)
- 1/4 tsp crushed red pepper flakes (or adjust to your level of kick)
Stir in any or all of these toppings.
Serve and enjoy!
Quick Tips
The oats are optional but add a great complex carb so you don’t have to make toast — don’t worry, it’s delicious!
It doesn’t really make a difference if you spray the coffee mug with olive oil or cooking spray, there will still be some residue in the coffee mug after you cook the mug o’eggs. It does clean up fairly easy with a light scrubbing!
