Why We Like It
If you like blueberries and the fresh flavor of lemon, you’ll LOVE these energy bites! Super easy to make and then ideal to grab and go as a quick snack or dessert!
Blend Together:
- 1 1/4 cups cashews (raw or lightly salted)
- 1/2 cup shredded unsweetened coconut
- 1/2 cup dried blueberries
- 1/2 cup dried dates (about 12 medium size dates)
- 1 tsp lemon zest (grated lemon peel from one lemon)
- 2 Tbsp lemon juice (juice from one large lemon)
- 1 Tbsp chia seeds
- 1/2 tsp vanilla extract
- 1/8 tsp salt (OPTIONAL, omit if using lightly salted cashews)
Add to a food processor or blender and blend until well combined, making sure the dates are chopped and well blended. (The mixture should form a dough that can hold together when pinched between your fingers.)
Roll and Dip:
- 3 Tbsp shredded unsweetened coconut (OPTIONAL)
Roll into one inch balls. If desired, place coconut in a shallow bowl and dip each ball into the coconut.
Store in an airtight container in the refrigerator (they will keep well for 5-7 days).
