Why We Like It
Do you love oatmeal? And love eggs? Why not combine them?! Adding eggs to oatmeal creates a creamy mixture that can be easily adapted to the flavors you love. Mix it up with your choice of berries or fruit, frozen or fresh, and then add nuts for some crunch to finish off this sweet and filling way to start your day! Cook First:
- 2 cups skim milk (or unsweetened almond or soy milk, or use water)
- 1 cup old-fashioned rolled oats
Add to a medium sized saucepan and stir to combine.
Bring to a boil and reduce the heat to medium-low.
Add Next:
- 2 cups sliced fruit (fresh or frozen, such as mixed berries)
- 1/4 cup raisins (or chopped pitted dates)
- 3 Tbsp ground flax seed
- 2 tsp ground cinnamon
Add to the oatmeal and stir to combine. Cook for about 3-5 minutes until heated through.
Add the Eggs:
- 2 eggs (or 3 Tbsp of peanut butter or almond butter)
Crack the eggs into the oatmeal and stir vigorously to combine into the oats. Continue to stir for 2-3 minutes until eggs are cooked through and well combined.
(If using peanut butter or almond butter, add and stir into the hot oats until well combined.)
Serve and Enjoy!
- 1/4 cup walnuts (chopped, or nut of your choice)
- 1/2 cup sliced fruit (fresh of your choice, OPTIONAL)
- 3 tsp pure maple syrup (or honey, OPTIONAL)
Serve topped with nuts and more fresh fruit and/or a drizzle of pure maple syrup or honey if desired.
Store leftovers in a covered container in the refrigerator and then warm up leftovers, adding 1-2 Tbsp of milk if desired.
