Why We Like It
Salads can easily be made with whatever ingredients you have on hand and a basic homemade dressing. This greek version is quick and easy — and beets, fresh or canned, have been found to lower blood pressure and enhance performance in athletes!
Make the Salad:
- 6 cups baby spinach leaves (or romaine, or greens of your choice)
- 1 cup cherry tomatoes (cut in half)
- 1/2 cucumber (chopped into bite size pieces)
- 1/2 red onion (thinly sliced)
- 1/4 cup kalamata greek olives (drained and sliced)
Add to a large bowl.
Add the Dressing:
- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
Drizzle on top of the salad and toss to combine.
Finish the Salad:
- 1 (8.25 oz) can beets (sliced, no salt added, OPTIONAL)
- 2 Tbsp feta cheese
Add to the salad just before serving.
Serve and Enjoy!
Quick Tips
You can buy greek (or kalamata) olives already pitted — having the pits already removed is so much easier!
