Why We Like It
Who wouldn’t love to have a cookie for breakfast? These not only make a nutrient-packed delicious grab-and-go breakfast, but work perfectly as a dessert or snack. We love to warm them up in the microwave for 10 or 15 seconds. They also freeze beautifully so you can have them on hand all the time!
Preheat the oven to 350 degrees
Prepare the Wet Ingredients:
- 1 banana
- 1 egg
- 1/2 cup natural peanut butter
- 1/3 cup pure maple syrup (or 1/2 cup packed brown sugar)
- 1 tsp vanilla extract
Add banana to a large bowl and mash with a fork. Add the remaining ingredients and mix with an electric mixer until smooth.
Add the Dry Ingredients and Bake:
- 1 1/4 cups whole wheat pastry flour (or whole wheat white flour, or gluten free flour)
- 1/2 cup peanuts (chopped)
- 1/2 cup dark chocolate chips (60% cacao bittersweet chocolate or higher)
- 1/2 tsp baking soda
- 1/2 tsp baking powder
Add to the bowl and continue to mix until well blended. Using a 1 oz cookie scoop, place cookies on a baking sheet approximately 2 inches apart (it’s not necessary to press down with a fork in a cross pattern, but you can if you wish). Bake for 10 minutes until lightly brown. Remove from the oven and let cool.
