Why We Like It
Do you know how challenging it can be to get fish patties just right? This version is great, because they are cooked in the oven. Made with ingredients that are both convenient and wholesome, these moist patties serve up beautifully on greens or as a burger, and the homemade tartar sauce adds a fantastic kick! And, excellent served with Curry Roasted Cauliflower and Carrots.
Preheat the oven to 400 degrees
Make the salmon patties:
- 3 (5 oz) cans salmon (skinless and boneless, drained)
- 2 eggs
- 1/4 cup almond flour (or oat or whole wheat flour)
- 1/2 red bell pepper (seeded and finely diced)
- 1 Tbsp stone ground mustard
- 3 garlic cloves (finely diced, or 3/4 tsp garlic powder)
- 1/2 tsp dried dill
- 1/4 tsp black pepper
Add to a large bowl and stir to combine.
Form into six 3-inch patties (or four 5-inch patties), and place on a large greased baking sheet.
Bake for 12-15 minutes.
Make the Spicy Tartar Sauce:
- 1/2 cup (5.3 oz) plain nonfat Greek yogurt
- 1 1/2 Tbsp light mayonnaise
- 1 Tbsp capers (drained, or dill pickle relish)
- 1-2 tsp hot sauce (or Sriracha, adjust to your level of kick)
Place in a small bowl and stir to combine.
Serve and Enjoy!
- 8 cups arugula (or fresh greens of your choice, plus salad vegetables, OPTIONAL, or greens of your choice)
- 4-6 whole grain buns (OPTIONAL)
If serving as a salad, place greens and veggies on individual plates, or if serving with buns, toast the buns within the last few minutes of baking time. Serve with the Spicy Tartar Sauce.
Quick Tips
Capers are like tiny pickles and can be found in a jar near the pickles and olives at the store. They add a ton of flavor to recipes like this one!
