Why We Like It
Why use a boxed mix that has way too much sugar, refined flour, and questionable additives? These simple REAL ingredients combine quickly to make moist, low-in-sugar, fudge-like brownies the whole family will love! They are gluten free and crazy good!
Preheat the oven to 325 degrees
Mix First:
- 2 eggs
- 1/3 cup honey (or pure maple syrup)
- 2 Tbsp brown sugar (firmly packed, or coconut or date sugar)
- 2 tsp vanilla extract
Add to a large bowl. Use an electric hand mixer and beat together until smooth and well combined, about 30 seconds.
Add Next:
- 1 cup almond butter (or natural peanut butter)
- 1/3 cup unsweetened cocoa powder
- 1/2 tsp salt (or use 1/8 tsp of salt if almond butter contains salt)
- 1/2 tsp baking soda
Add to the bowl and beat until smooth.
Stir in Add-ins:
- 1/4 to 1/2 cup dark chocolate chips (or semi-sweet chocolate chips)
- 1/4 cup walnuts (chopped, or nut of your choice, OPTIONAL)
Add to bowl and stir to mix into the batter.
Pour the batter into a greased 8 inch x 8 inch baking dish and spread out evenly. (You can also grease the baking dish with oil and then line it with a piece of parchment paper if desired – the oil helps the paper stick and the parchment paper makes it easier to remove the brownies.)
Bake for 25-28 minutes until a toothpick inserted into the center comes out clean.
Serve and Enjoy!
When cool, cut into squares. Store in the refrigerator in a sealed container.
(We love to serve the brownies with a scoop of natural vanilla ice cream!)
Quick Tips
In our experience, if you overcook the brownies they can be dry. So, we suggest baking them 25-28 minutes or until a toothpick or knife comes out clean, and then if needed add more time, 2-3 minutes at a time, until they are done.
