Almond Butter Bites


Almond Butter Bites

Serves: Makes 40 balls
Ready In: 15 minutes (plus chilling time)

Why We Like It


These little bites work great as a grab-and-go breakfast, quick snack or even dessert!  Almond butter provides a delightful smoothness, while the bite of cranberry and chocolate truly send the flavor over the top — the whole family will be snacking happily and healthfully!

Blend Together:

  • 20 dried dates (pits removed)
  • 1/2 cup old fashioned rolled oats
  • 1/4 cup shredded unsweetened coconut (or coconut flakes)
  • 1 cup almond butter (or natural peanut butter)
  • 1 Tbsp coconut oil (melted)
  • 1/4 cup raw pecans (or nut of your choice)
  • 1 Tbsp honey
  • 1 tsp vanilla extract

Place in a food processor and blend until well combined.  Add more coconut oil (1 Tbsp at a time) if you feel it is too dry.

Add the Rest:

  • 1/4 cup dried cranberries (OPTIONAL)
  • 1/4 cup dark chocolate chips (or semi-sweet chocolate chips)

Stir or pulse the add-ins of your choice.

Roll into bite-sized balls (about one inch) and refrigerate for 30 minutes before serving.

Serve and Enjoy!

Store in a covered container in the refrigerator or freezer.
