Why We Like It
These little bites work great as a grab-and-go breakfast, quick snack or even dessert! Almond butter provides a delightful smoothness, while the bite of cranberry and chocolate truly send the flavor over the top — the whole family will be snacking happily and healthfully!
Blend Together:
- 20 dried dates (pits removed)
- 1/2 cup old fashioned rolled oats
- 1/4 cup shredded unsweetened coconut (or coconut flakes)
- 1 cup almond butter (or natural peanut butter)
- 1 Tbsp coconut oil (melted)
- 1/4 cup raw pecans (or nut of your choice)
- 1 Tbsp honey
- 1 tsp vanilla extract
Place in a food processor and blend until well combined. Add more coconut oil (1 Tbsp at a time) if you feel it is too dry.
Add the Rest:
- 1/4 cup dried cranberries (OPTIONAL)
- 1/4 cup dark chocolate chips (or semi-sweet chocolate chips)
Stir or pulse the add-ins of your choice.
Roll into bite-sized balls (about one inch) and refrigerate for 30 minutes before serving.
Serve and Enjoy!
Store in a covered container in the refrigerator or freezer.
