Springtime meets Cinco de Mayo in the Eat REAL America meal ideas this week!
Obviously many of us know that Cinco de Mayo is the 5th of May, but what is its significance? It’s a celebration of Mexican culture and heritage and is celebrated primarily in the U.S. In 1862, Mexico won the Battle of Puebla against France. The reason this is a big deal is because France sent a huge army to invade Mexico and, although the Mexicans were the underdog, they won the battle and this unlikely victory is celebrated every 5th of May. Many believe Cinco de Mayo is Mexico’s Independence Day, but that day is actually celebrated on September 16th, which is a much more important holiday in Mexico!
To get you in the mood to celebrate Mexican-style, we have included several delicious ideas: the Sweet Potato Burrito Bowl, Mexican Inspired Tuna Salad, and Huevos Rancheros Tortilla Pizza. And, to add a little spring flair to your Mexican theme, try the Spanish Veggie Scramble — it’s a Spanish inspired scramble made with sausage, leeks, asparagus and mushrooms, and it tastes fantastic!
If you have never tried fennel, check out the great-tasting One-Pot Chicken with Artichokes and Fennel, or we have several other fennel ideas!
Make the most of your locally-grown produce this week! In many parts of the country, produce is beginning to pop up — it’s a great time for asparagus, carrots, radishes, greens, strawberries and so much more!
