You know summer is about to start without even looking at the calendar! Just visit the farmers’ market and you will see loads of summer produce showing up – zucchini, cucumbers, kohlrabi, blueberries, and more!
Enjoy zucchini deliciously this week in the Zoodles Gone Mediterranean and the Mexican Zucchini Skillet! If you have a spiralizer, you can spiralize a big batch and use them for both of these meals. Kohlrabi are at their best this time of year and are perfect in the Glazed Turnip & Kohlrabi Salad and as a substitute for the jicama in Ivett’s Mango Pico de Gallo.
If many areas of the country, this is the ideal time for fresh blueberries. Enjoy them in the Blueberry Apricot Spinach Salad and the Blueberry Overnight Oats! These overnight oats are so refreshing on hot summer mornings. We love to throw them in a backpack and enjoy them after biking to one of our local coffee shops.
If you have never had soy curls before, they are an excellent meat alternative and a great source of protein and fiber. All you have to do is rehydrate them, and then they resemble cooked chicken in meals like the Mongolian Soy Stir Fry. We are working on a coaching tip all about soy, so stay tuned!
