With the Super Bowl and Valentine’s Day behind us, now we can turn our attention to Fat Tuesday!

Did you know next Tuesday is Shrove Tuesday (also known as Pancake Day)?!  This is the day before Ash Wednesday, which marks the start of the Lenten season.  It comes from the old English custom of people saying confessions for the wrong things they’ve done, and using up ingredients so they were ready to fast for Lent.  The ingredients most people had on hand were eggs and milk…combine this with one or two other ingredients and you have PANCAKES!  In other countries, Shrove Tuesday is known as Mardi Gras or Fat Tuesday – again involving the idea of using up food before Lent.

So, go ahead and celebrate REAL food style!  The Oatmeal Raisin Pancakes are healthy and delicious – using only REAL ingredients.  Plus, you can add a little Mardi Gras to your table with the Skillet Jambalaya (and then transform the leftovers into the Cajun Inspired Breakfast Burritos)!

For those celebrating the season of Lent, we have also included excellent ideas such as the Curried White Fish Creole and the Dill Pickle Flatbread (yes, pickles and it’s crazy good!).   We will continue to provide at least one fish or seafood recipe the next few weeks and, of course, vegetarian options too.

We think you will also love the side dishes this week – the Roasted Cabbage is simple and delicious, the Broccoli Cauliflower Salad can easily be stretched over multiple meals, and the Roasted Squash with Spicy Onions is a fantastic combination of flavors and textures!
