Yes, you read right, we combined acorn squash and pineapple – and it was delicious! Add some cod (or your favorite white fish) and our slightly spicy Zhoug sauce and the result is one crazy good combination of flavors…the best part is it all cooks on one large sheet pan! A couple of other great entrees this week include the Slow Cooker Chipotle Veggie Chili (throw it together in the morning, and then come home and dinner is ready and waiting!) and the Mediterranean Inspired Pork Tenderloin (it would be perfect with the Winter Fattoush Salad).
For a couple of quick and easy meals, the Simple Skillet Hash is ideal, and the Pear & Blue Cheese Pizza is unbelievably delicious!
We know Christmas is still a couple of weeks away, but we wanted to include ideas for all the planners out there – these would be excellent to take to holiday parties. The Christmas Quinoa Salad is like Christmas in a bowl! And the Almond Joy Cookie Bites are a combination between a coconut macaroon and an Almond Joy candy bar. We will, of course, provide many more holiday ideas next week!
