This week’s meal ideas are filled with delicious ideas to take advantage of fresh summer ingredients like tomatoes, corn, okra, sweet potatoes, kale and eggplant!

Just in case you need a few new ideas what to do with the August Superfood of the Month, eggplant is incredibly good when turned into burgers…with caramelized shallots on top.  A side of sweet potato fries makes this a fantastic meal!  Plus, have you wondered what Baba Ganoush is, or how to make your own?  We have included an idea to do just that, with roasted eggplant and garlic — a great Mediterranean-inspired dip!

The One Pan Vegetarian Lasagna, Cobb Salad with Green Goddess Dressing and Sausage, Kale and Okra Sauté will keep your meals super-simple…and super-delicious…this week.  Then, finish it off with a fantastic sweet treat or snack with the Oatmeal Raisin Granola Bars!
