Chunky Monkey Breakfast Cookies
Serves: 10-12 (makes 36 small cookies)Ready In: 35 minutes

Why We Like It


Who wouldn't love to have a cookie for breakfast?  These not only make a nutrient-packed delicious grab-and-go breakfast, but work perfectly as a dessert or snack.  They also freeze beautifully so you can have them on hand all the time!

Preheat the oven to 350 degrees

Prepare the Wet Ingredients:

1 banana
1 egg
1/2 cup natural peanut butter
1/3 cup pure maple syrup (or 1/2 cup packed brown sugar)
1 tsp vanilla extract

Add banana to a large bowl and mash with a fork. Add the remaining ingredients and mix with an electric mixer until smooth.

Add the Dry Ingredients and Bake:

1 1/4 cups whole wheat pastry flour (or whole wheat white flour, or gluten free flour)
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup peanuts (chopped)
1/2 cup dark chocolate chips (60% cacao bittersweet chocolate or higher)

Add to the bowl and continue to mix until well blended.  Using a 1 oz cookie scoop, place cookies on a baking sheet approximately 2 inches apart (it’s not necessary to press down with a fork in a cross pattern, but you can if you wish).  Bake for 10 minutes until lightly brown.  Remove from the oven and let cool.
