Almond Butter Brownies

Almond Butter Brownies

Why We Like It

We try to find great-tasting, healthy desserts, sometimes with little success, but we have found a big-time winner in these brownies!  The kids love them, request them frequently, and have claimed, "these are definitely website worthy!"  They are gluten free, made with almond butter, and are crazy good!

Preheat the oven to 325 degrees

Mix First:

  • 2 eggs
  • 5 Tbsp honey (or pure maple syrup)
  • 2 Tbsp brown sugar
  • 2 tsp vanilla extract

Add to a large bowl.  Use an electric hand mixer and beat together until smooth and well combined, about 30 seconds.

Add the Almond Butter:

  • 1 cup almond butter

Add to the bowl and beat until smooth.

Add the Dry Ingredients:

  • 6 Tbsp cocoa powder (unsweetened)
  • 1/2 tsp baking soda
  • 1/8 tsp sea salt

Add to the bowl and mix again until well combined.

Stir in Add-ins:

  • 1/2 cup dark chocolate chips (or semi-sweet chocolate chips)
  • 1/4 cup walnuts (chopped, or nut of your choice, OPTIONAL)

Add to bowl and stir to mix into the batter.  Prepare a 8 inch x 8 inch baking dish by greasing it with olive oil then lining with a piece of parchment paper (the oil helps the paper stick and the parchment paper makes it easier to remove the brownies).  Spread the brownie batter in the baking dish, spreading it out evenly.  Bake for 30-35 minutes until a knife inserted into the middle comes out clean.

Serve and Enjoy!

Slice and serve.  (We served the brownies with a scoop of natural vanilla ice cream).
