Watermelon Tomato Gazpacho

Why We Like It


Gazpacho is a Spanish-style soup made with tomatoes and other spices, and it is typically served cold.  If you are anything like me, you are thinking, soup…cold?  But, go ahead and try it…you just might be surprised how good it tastes, especially on a hot summer day!

Mix it together:

  • 4 cups watermelon
  • 2 tomatoes (or 1 1/2 cups cherry tomatoes)
  • 1 cup cucumber (cut into large chunks)
  • 1/2 cup fresh basil leaves
  • 1/2 cup red onion
  • 1 yellow bell pepper (or orange bell pepper, cut into large chunks)
  • 2 Tbsp lime juice (juice from one large lime)
  • 1/2 tsp black pepper
  • 1/4 to 1/2 tsp salt
  • 1 jalapeno (OPTIONAL)

Place in a food processor and pulse until well combined.  (You want it to still have a slightly chunky texture.)

If you want to add a little kick, you can add a jalapeno (with or without the seeds).

Chill Time:

Chill in the refrigerator for 30 minutes up to one hour for the flavors to come together.

Serve and enjoy!
