Sausage and Summer Veggie Foil Packet

Why We Like It


So simple yet so loaded with flavor!  Foil packets are ideal for summer when you can fire up the grill and end up with delicious meal using a variety of in-season produce!

Preheat the Grill to Medium High

Prepare the Foil Packets:

  • 2 sausage links (pork, turkey or chicken sausage of your choice, sliced)
  • 1 zucchini (cut in half lengthwise and sliced)
  • 1 yellow summer squash (cut in half lengthwise and sliced)
  • 1 pkg (8 oz) mushrooms (type of your choice, sliced)
  • 1 red bell pepper (seeded and cut into strips)
  • 1 red onion (cut in half and sliced)
  • 2 Tbsp olive oil
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Add everything to a large bowl and toss to combine.

Assemble the Foil Packets and Grill:

  • 4 large pieces aluminum foil (about 18 inch pieces)

Spread out two pieces of foil.  First, divide the sausage and vegetable mixture among the two pieces of foil.

Next, take the remaining two pieces of foil and cover and seal the four sides.  You will now have 2 large foil packets.

Place the foil packets directly on the grill grates and grill for 20 minutes or until sausage is cooked through and vegetables are tender.

Serve and Enjoy!

  • 2 Tbsp fresh chopped herbs (chopped, such as oregano, thyme or basil)

When you remove the foil packets from the grill and open them, be careful — steam will escape!  Serve topped with fresh herbs.
