Why We Like It
Do you love strawberries? This is a super simple way to enjoy strawberries in one delicious dessert! With a few simple ingredients and no heating up the oven or stovetop, you will have a healthy, low sugar strawberry sweet treat that is perfect for spring or summer!
Prepare the Crust:

Add to a food processor or blender. Blend until coarse and crumbly. Pour into an 8 inch x 8 inch baking dish, or a pie plate. Use your hands to press the crust mixture into the dish (it will cover just the bottom surface). |
Soak the Dates:

Add dates to a small bowl and add 2 Tbsp of very warm water. Let soak for 5-10 minutes. |
Add Layer of Sliced Strawberries:

Add sliced strawberries on top of the crust, overlapping if necessary. |
Make the Strawberry Puree:
|
Add to a food processor or blender, along with the soaked dates and their soaking water. Blend until smooth. Pour over the sliced strawberries, spreading in an even layer. |
Add another layer of strawberries:
|
Add strawberry slices on top of the strawberry puree layer. |
Add Last:
|
Sprinkle toasted coconut on top of the dessert. Place in the refrigerator for up to one hour to let set. |

Quick Tips
To easily toast coconut, simply add it to a small dry skillet over medium heat on the stove. Cook for about 2 minutes, stirring frequently, until lightly browned and fragrant (don’t walk away — it will not take long for the coconut to brown)!
Medjool dates are larger dates, typically more moist, and are equivalent to about 3 regular size dried dates. Either will work great, just make sure the pits are removed. If Medjool dates look like they have spots, resembling mold, don’t be alarmed, they are just developing sugar spots. For more about dates, see our coaching tip.
