Why We Like It

Mulligatawny soup is a spicy Indian-inspired soup, typically made with meat or chicken.  Feel free to add leftover chicken, or keep it vegetarian -- amazingly delicious either way!  The spices give it great flavor with just the right amount of kick!

Saute First:

  • 1 Tbsp olive oil
  • 1 white onion (or yellow onion, chopped)
  • 1 cup carrots (chopped)
  • 1 cup celery (chopped)
  • 1/2 cup mushrooms (chopped, type of your choice)
  • 3 garlic cloves (finely diced, or 3/4 tsp garlic powder)

Add oil to a large pot over medium high heat.  Add everything else and cook until beginning to get tender, about 10 minutes, stirring occasionally.

Add Apples and Seasonings:

  • 2 apples (cored and chopped, no need to peel)
  • 1 tsp dried thyme
  • 1 tsp curry powder
  • 1/2 tsp turmeric
  • 1/4 tsp crushed red pepper flakes

Add to the pot and stir to combine.  Cook for 5 minutes, until apples are beginning to soften.

Add Next:

  • 5 cups low-sodium chicken broth
  • 3/4 cup brown rice (uncooked, quick cooking)
  • 1 1/2 cups cooked chicken (chopped or shredded, OPTIONAL)

Add to the pot, with cooked chicken, if desired, and bring to a boil.  Reduce heat to a simmer, cover, and cook for 10 minutes.

Add Last:

  • 1 (15 oz) can light coconut milk
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Add to the pot and stir to combine.  Simmer for another 4-5 minutes, or until heated through.

Quick Tips

An easy way to have cooked chicken ready for a recipe like this one is to place chicken breasts in a slow cooker overnight, the night before, (with a little salt, pepper and about 1/2 cup of chicken broth or water).  Then your chicken is cooked and ready the next morning.  Store the chicken in the refrigerator and it will make dinner come together super easy!  Or, for a more flavor-filled chicken, cook the Seasoned Slow Cooker Chicken — it works for a variety of recipes!
