Why We Like It

Loaded with lemon, ginger and sweetness for a tangy sweet and sour experience, this mocktail has the flavors you love in the lemon drop candy!  Refreshing and delicious, even without the vodka!

Mix Together:

  • 1 1/2 cups unsweetened seltzer water (or unsweetened sparkling water)
  • 2 tsp lemon zest (grated lemon peel)
  • 2 Tbsp lemon juice (juice from 1 lemon)
  • 2 Tbsp Honey Simple Syrup (see quick tip, or use 2 tsp pure maple syrup)
  • 1 tsp fresh ginger (grated fresh ginger)
  • 2 tsp extra virgin olive oil (OPTIONAL, see quick tip)

Add to a large measuring cup and stir to combine.

Sugar Coat the Rim (OPTIONAL):

  • 1/2 Tbsp coconut sugar
  • 1/2 lemon (cut into wedges)

Cut a slit in the lemon wedge and then run the lemon around the rim of each glass.

Place the sugar in a shallow bowl (larger than the glasses) and then dip the rim of the glass in the sugar until lightly coated.

Serve and Enjoy!

  • 1 inch piece fresh ginger (sliced, OPTIONAL)
  • 1/2 lemon (sliced)

Pour the mixture into each glass over ice.  Top with a slice of fresh ginger and a lemon slice if desired.

Quick Tips

Many mocktails call for sweetness from simple syrup because it blends easier than just adding honey or sugar.  It is super easy to make your own (then you know exactly what is in it!).

Homemade Honey Simple Syrup:  add 1 cup of water and 1/2 cup of honey (or a 2:1 ratio of water to honey) in a small saucepan and simmer on low heat for 5-8 minutes, stirring occasionally, until honey is dissolved.  Let cool and store in a covered container or mason jar in the refrigerator – it will last for several weeks.

It may sound strange to add olive oil to a mocktail.  It emulsifies with the liquid when blended and adds a smooth texture and flavor to the drink.

NOTE: when purchasing seltzer or sparkling water, be sure to read the ingredients.  Seltzer water will be just carbonated water.  Some brands of ginger ale, tonic water, club soda, and sparkling water are loaded with extra ingredients.
